This is the Custom Menu that weirdly is not enabled from the factory, it's where all the settings of the camera can be changed. So first thing is to go to the Wrench/Spanner Menu and set  Gear Wheel/Accessory menus to On. The Gear Wheel menu is the Custom menu.

A     AF/MF           

AF Mode  For Stills and Movies can set up the choice for each from S-AF, C-AF, MF, S-AF+MF, C-AF+TR
AF AreaChoose 11 spot or 1 spot AF, and also select position of the 1 spot.
Reset LensSet On to make the lens return to infinity focus or Off to stay where last focused at power off. 
Bulb FocusingIn MF, during exposure On allows focus using the lens focus ring, Off locks the focus during the exposure.
Focus RingSet focus ring to clockwise or anti-clockwise rotation.
MF AssistSet On to cause the preview image to magnify when the focus ring is touched, Off for no change to preview magnification.
Focus Spot Set HomeFor 4 different focus spot modes, set the home position.
          
B    Button       
       
AEL/AFLSet Modes for S-AF, C-AF, MF to make the shutter button and assigned AEL/AFL button behave as desired. Note that Mode 3 causes the assigned AEL/AFL button to become AF start button and shutter just takes the shot. Details are explained in each mode in the menu when selected. On earlier bodies, this item is found in Custom Menu B.
AEL/AFL MemoSet On to cause exposure lock when assigned AEL/AFL button is pressed, press again to unlock, or Off to lock exposure only while button is held down.
Fn FunctionChoose Off/Backlit LCD on-off/Video start-stop/AEL-AFL/Underwater use/MyMode/Test Picture/RAW/MF/Focus Home/One Touch WB/DOF Preview/Face Detect (a function selected here is not available in the other button)
Red Button FunctionChoose Off/Backlit LCD on-off/Video start-stop/AEL-AFL/Underwater use/MyMode/Test Picture/RAW/MF/Focus Home/One Touch WB/DOF Preview/Face Detect (a function selected here is not available in the other button)
MyMode SetupSetup or use MyMode 1 and 2. Page 73 of the user manual has more about this. MyModes on this camera are badly implemented thus usually not used by anybody.
Button TimerChoose 3/5/8 seconds or Hold. Sets the time that is available to make adjustments with the 4 way buttons. If Hold the OK buttons ends adjustment period.
              
C    Release   
Rls Priority SSet On for shutter release even when auto focus is not attained, Off to cause the shutter release to only happen when proper auto focus is attained.

D    Disp/Sound/PC                              
HDMISelect HDMI output of 1080i/720p/480p/576p. Mini HDMI connector needed.
Video OutChoose NTSC or PAL TV standard to suit your TV or recorder.
SleepChoose Off/1/3/5/10 minutes before camera sleeps. Awaken with any button press.
Live View BoostSet On to more easily see what's in the frame, particularly for low light or low key shots. Set Off to show more or less what the actual exposure will look like. When On the Exposure Compensation has no effect on the preview or the preview histogram or blinkies, but does have an effect on the actual  exposure. When Off the Exposure Compensation does have an effect on the preview.
Face DetectWhen set to On faces will be outlined in white and focused on when AF is used.
Thumbnail/Info SettingChoose what is displayed in Playback and Live View when display is cycled with Info button. Also choose what the Thumbnail button (Fn) does when pressed. in Playback
Camera Control SettingChoose what will be displayed in shooting modes for iAuto/PASM/Art-Scan modes. If more than 1 type of display selected then when shooting the Info button cycles displays.
Histogram SettingsSet the upper and lower boundaries shown on the histogram, also has an effect on the blinkies = Highlight &  Shadow feature.
EVF AdjustAdjust Colour Temperature and Brightness of the VF-2/3/4 if fitted.
Backlit LCDChoose 8 sec/30 sec/1 min/ Hold to set time that LCD stays full brightness.
Mode GuideSet On to display help on LCD when Mode dial moved. Off still shows P/A/S/M/iAuto/Art/Scn when at those dial spots.
Playback Close Up ModeIn Mode 1 press Magnify to go through the various playback magnifications ranging progressively from 2x to 14x. The thumbnail button goes backwards towards 1x. The OK button sets to 1x normal display.

In Mode 2 press Magnify to display the last selected zoom frame, from 5x to 14x, press magnify a second time to allow the Info button to change the magnification, press a third time to go back to 1x display. The OK button has no effect.
SoundSet On or Off, I set it Off to get rid of the very annoying focus beeps and other random beeps.
Volume
Set speaker volume.
USB ModeChoose a computer or printer connection mode. Storage is used for in/out transfers to card and also used for firmware updates.
    
E    Exp/meter/ISO   
EV StepSet the increment used for exposure parameters, choices are 1/3EV, 1/2EV, 1EV.
MeteringSet the metering mode, choose for Matrix, centre weighted, spot, spot hi, spot sh(adow). Spot hi allows for highlights to stay bright, spot shadow allows shadows to remain dark. You need to experiment with that last two to see what they do for you.
AEL MeteringChoices of auto, matrix, centre weighted, spot, spot hi, spot sh. This sets what the AEL assigned button does when pressed. Auto follows what the current preview metering mode is.
ISOChoices are Auto, 100, 200, 400, 800, 1600, 3200 if ISO Step is set to 1EV. Choices for 1/3 EV step are Auto, 100, 125, 160, 200, 250, 320, 400, 500, 640, 800, 1000, 1250, 1600, 2000, 2500, 3200.
ISO StepSet ISO step choice of 1/3 EV or 1 EV.
ISO-Auto SetSet High and Low limits to ISO. Base is normally left at 200. High can be as high as you can endure.
ISO-AutoChoose P/A/S or All where P/A/S has Auto ISO for PAS modes but manual ISO at 200 for Manual mode. Set to All allows Auto ISO to work for all of the PASM modes.
Bulb TimerSet the maximum time for Bulb and Time shooting. Choices are 1, 2, 4, 8, 15, 20, 25, 30 minutes.
Anti-ShockChoices of Off, 1/8, 1/4, 1/2, 1, 2, 4, 8, 15, 30 seconds. This sets the delay between the shutter initial closure after shutter button press until the shutter runs for the exposure. Helps lessen shutter shock or tripod shakes. Can use this delay in burst mode to get say 1 shot per second while the shutter button is held down.
      
F    Flash Custom  
Flash X-SyncSet the maximum flash sync speed, limit is 1/160 sec for the pop-up and for other attached flashes.
Flash Slow LimitSet the slowest shutter speed when flash is used, too slow and shake and/or subject blur may occur in parts lit by ambient light, default is 1/60 sec, I usually set it to 1/30 sec.
Flash Compensation + Exposure CompensationThe manual says....When set to [On], it will be added to the exposure compensation value and flash intensity control will be performed. I have not tested what this does in reality. I leave it Off and manage flash by using Manual mode with selected ISO, Aperture and shutter speed and let TTL flash fill in as appropriate with possible added flash compensation to make things look nice.
             
G     Files/Colour/WB  
Noise ReductionOn/Off/Auto choices. On means that dark frame subtraction tale splace on all shots. Off on none, Auto on shots of 4 seconds or longer. Dark frame subtraction doubles the selected shutter time.
Noise FilterChoice of Off/Low/Standard/High - tends to smear image detail while remving noise, best to leave Off and keep to a sensible upper ISO limit.
WBSet the White Balance, choices are Auto, 5300K, 7500K, 6000K, 3000K, 4000K, 4500K, 6600K, 5500K, user set, Custom White Balance choice of from 2000K to 14000K. Most allow custom offsets, most have symbols to indicate possible use, ie sunny, cloudy etc. Usually accessed via the SCP instead of digging in the menus.
All WB +/-All Set to use the offsets in all except Custom, All Reset to set all offsets back to 0, except Custom.
Colour SpaceSet to sRGB or Adobe RGB. Has an effect on the jpeg and causes the default first digit of the file name to change from P for sRGB to _ (underscore) for AdobeRGB. The RAW is the same but with a flag in it to indicate which colour space was chosen for the jpeg. The common use is the sRGB space, the larger Adobe RGB space only suits those situations that really need it and can handle it. The RAW of course is even wider colour space so can be handled in any fashion in any space.
Shading CompensationChoose [ON] to help lessen corner darkening (vignetting). Does not work for teleconverters or extension tubes.
May increase noise in corners for higher ISO settings.
File SetSet up the jpeg compression and the image size for 4 possible combinations. Choices are from Large, Medium, Small for pixel count, and  Super Fine, Fine , Normal, Basic for compression. These four choices then appear as the four possibilities for the jpeg when using the SCP to select the image output. If using RAW or RAW+jpeg then the jpeg is only usually for checking purposes so a Large-Normal jpeg is perfect for that to save storage space. If relying on jpegs only (unwise) then Large-Fine is the useful choice. The Super Fine choice gains so little in extra quality over the Fine that it is truly not worth bothering with due to its huge size. Better in that case by far to use the RAW and get even better results later with a RAW processing program.
Pixel CountSet the pixel count for the Medium and Small images. The Large choice that appears in the SCP is always the maximum pixel count for the aspect ratio chosen.
        
H    Record/Erase 
Quick EraseSet On and the previewed image is immediately deleted when the delete button is pressed. Off and a Yes/ No choice appears for confirmation of delete.
RAW+JPEG EraseChoice to delete RAW+jpeg, or RAW only or jpeg only.
File NameSet to Auto and the file numbers keep increasing even when a new card is inserted, the numbers carry on from the last shot taken or the highest number found on the card, whichever is the highest.
Set to Reset, and the file numbering always starts from 0001 on a fresh card inserted.
Edit FilenameHere you can edit the first four digits of the filename to something sensible or recognisable. The default for sRGB is Pmddxxxx and for Adobe RGB is _mddxxxx. Where 'm' is the month running from 1 for January to '9' for September and 'A' for October, 'B' for November and 'C' for December. The xxxx runs from 0001 to 9999 then a new folder is created to carry on from 0001 again. The folders run as 100OLYMP\, 101OLYMP\, 102OLYMP at each 9999 overflow.
In my case I identify the bodies in use by editing the filename so E-PL1 body number 1 has PL1Axxxx file names, E-P3 has EP3Axxxx, and the E-PL5 has PL5Axxxx, when a second E-PL5 body arrives it will become PL5Bxxxx.
The default "mdd" file name stuff really confuses, the date is in the exif data anyway, why repeat it in the filename?
Priority SetCan set whether Yes or No is the default highlighted when a confirmation is required.
dpi SettingsSets print resolution, not needed to worry about in this day and age, an old hangover from Photoshop days when it tended to more obey the dpi settings over the actual print size required.
         
I    Movie     
Movie ModeSet the movie record mode. Choices of PASM.
Movie + StillSet On to record a photograph when movie ends.
Movie SoundCan be set On or Off. Off of course for a silent movie or to add sound later from another source when in post process.
     
J    Utility                 
Pixel MappingUse when needed or every couple of years to map out bad pixels.
Exposure ShiftSets a exposure compensation offset to the various metering modes. Enables a "permanent" offset to any or all of Matrix, Centre-Weighted or Spot metering.
Battery Warning LevelSet to positive values to get the low battery warning earlier.
